Ice Box Cookies

2 cups brown sugar

½ cup lard or butter

2 eggs, beaten

½ cup chopped nuts

1 teaspoon soda

1 heaping teaspoon baking powder

3 ½ cup flour

Applesauce Cake

1 ½ cups sugar

1 ½ cups applesauce

2 eggs

½ cup shortening

½ cup boiling water

2 teaspoons soda

2 ½ cups flour

1 ½ teaspoon cinnamon

½ cup chopped nuts

scant cup raisins

Banana Cup Cakes

Cream together

½ cup shortening

1 ½ cup sugar

2 well beaten eggs

2 cups flour

½ teaspoon salt

1 teaspoon baking powder

¾ cup buttermilk

1 teaspoon vanilla

3 large ripe bananas, mashed

 

Sprinkle 1 teaspoon lemon juice over bananas.

Fill muffin pans ¾ full

Preheat oven

Bake at 375 degrees for 20 minutes.

Fruit Cake

1 cup sugar

1 cup sour milk

3 eggs, well beaten

2 cups flour

1 teaspoon soda

¾ cup butter

1 teaspoon cinnamon

1 teaspoon nutmeg

 

To this add:

1 cup chopped nuts

1 cup raisins

1 cup currants

1 cup pineapple

2 cups dates, chopped and dusted with flour

 

Mix all together and bake 1 ½ or 2 hours.

When done, let stand 5 minutes.

Turn out and have ½ cup orange juice and ½ cup powdered sugar mixed together and pour over cake which has been covered with candied fruits and nut meats.

Bake at about 325 degrees.

Chocolate Pecan Cake

Grandview, Indiana

 

1 cup flour

1 cup sugar

1 teaspoon baking powder

Add 1 cup milk with 2 oz. Unsweetened chocolate.

1 teaspoon vanilla

Add 3 egg yolks and whites

Stir as little as possible and carefully add 1 cup chopped nuts.

Spread in flat greased tin and bake in moderate oven.

Quick Coffee Cake

½ cup sugar

1 ½ cups flour

½ tsp. Salt

3 tsp. Baking powder

1 egg, beaten in cup and finish filling with milk

4 Tablespoons Butter (melted) added last

 

Mix all dry ingredients together and to this add egg, milk and melted butter.

Sprinkle sugar and cinnamon rather heavy on top,

then bake in a medium hot oven about 20 or 30 minutes.

Bake in a large enough pan that the batter will be thin in the pan.

Pineapple Upside Down Cake

½ cup butter

1 cup brown sugar

1 no. 2 can sliced pineapple

2 Tablespoons large whole pecans

1 cup sifted cake flour

1 teaspoon baking powder

1/8 teaspoon salt

3 eggs, separated

1 cup granulated sugar

5 Tablespoons pineapple juice

 

Melt butter in large baking pan.

Spread brown sugar evenly in pan and arrange pineapple slices on sugar, filling in spaces with pecans.

Sift flour, baking powder and salt.

Beat egg yolks until light, adding sugar gradually.

Add pineapple juice and sifted flour.

Fold in stiffly beaten egg whites.

Pour over pineapple.

Bake in moderate oven (375 degrees) 35 minutes.

Turn upside down on cake plate.

Serve with whipped cream if desired.

Marie’s Cake (to be used in place of a fruit cake)

Makes a 3 lb. Cake and will keep quite awhile if wrapped in tin foil.

 

Cream:

½ lb butter or margarine

2 cups granulated sugar

 

Add:

4 cups flour

1 tsp. Baking powder

2 good teaspoons nutmeg

6 egg yolks

 

Add:

1 cup fruit juice – grape is good

1 lb. pecan meats (chopped)

1 lb. Seedless raisins

 

Add :

6 egg whites, beaten stiff

 

Pour into well greased and floured loaf pan or pans.

Bake at 250 degrees for 3 hours.

Let stand in the pan 1 hour when done before turning out.

Jelly Roll

1 cup sugar

4 eggs, beaten separately

½ cup sweet milk

1 teaspoon cream of tartar

½ teaspoon soda

1 cup flour

 

Fold in beaten egg whites last and bake in moderate oven in shallow square or rectangular pan.

When done, turn out on a tea towel that is damp.

Spread with jelly or jam and roll immediately.

A Dandy Cake

1 cup brown sugar]1 ¼ cups water

1/3 cup shortening

2 cups seeded raisins

2 teaspoons cinnamon

½ cup nutmeg

½ teaspoon cloves

 

Boil 3 minutes, cool.

Then add:

1 teaspoon salt & 1 teaspoon soda dissolved in 2 teaspoons water

 

Blend in 2 cups of flour mixed with 1 teaspoon baking powder

 

Pour into an 8 inch pan

Bake 1 hour with slow moderate temperature

 

You may cut into small squares

Ice with some confectioner’s sugar mixed with a little butter or cream

Graham Cracker Roll

1@ lb. Graham crackers

½ box dates or w cup raisins (ground)

1 cup candied cherries

1 cup nut meats

½ lb. Chopped marshmallows

1 cup cream

 

Keep out 3 crackers.

Crumble the remaining crackers fine.

Add cherries,raisins or dates, nuts, marshmallows, cream and mix well.

Crush the 3 remaining crackers.

Form the mixture into a long shaped roll and roll this in the cracker crumbs.

Allow to stand 24 hours in ice box.

Serve with whipped cream.

Little Billy Cup Cakes

½ cup butter

1 egg

1 cup buttermilk

2 cups flour

1 level tsp. Soda

½ tsp. Each of cinnamon, nutmeg, ginger and cloves

 

Makes about 14

Banana Cake (Extra Good)

2 ¼ cups sugar

¾ cup shortening

3 eggs

3 cups flour

¾ tsp. Salt

¾ tsp. Baking powder

1 ¼ tsp. Soda

¾ cup milk

4 bananas (medium)

 

Beat whites of eggs separately and fold in last.

This makes a nice large cake.

Applesauce Cake

1 cup sugar

1 cup suga1/2 cup shortening

2 eggs

1 tbsp. Hot water

1 cup applesauce (sweetened)

1 tsp. Cinnamon

1 tsp. Nutmeg

2 cups flour

1 tsp. Soda

1 tsp. Baking powder

Creamy Cooked Frosting

1 ½ cups white sugar

1 Tbsp. White corn syrup

t Tbsp. Water

2 egg whites

 

Combine all ingredients in top of double boiler and mix well.

Beat 3 minutes over boiling water.

Remove from fire but leave over hot water and beat 7 minutes.

Add vanilla

Orange and Raisin Cake

¾ cup margarine

¾ cup sugar

¾ cup sour cream (or milk)

2 eggs

Pinch salt

1 cup raisins

1 ¾ cup flour

1 tsp. Soda

2 oranges

 

Grind raisins and one orange (peel and all).

Cream sugar, margarine and salt.

Add well beaten eggs, milk.

Blend together.

Add ground raisins and orange.

Mix with batter.

Add flour and soda which have been sifted together.

Bake in moderate oven 30 minutes or until done.

 

While hot, pour juice of other orange over the top of the cake.

Ice with powdered sugar mixed with orange juice.

(This will run down through the cake making it very moist.)

Apple Sauce Cake

5 Tbsp. strong coffee

1 ½ cups apple sauce

½ cup shortening

1 cup sugar

1 cup nuts

1 tsp. each cinnamon, allspice and cloves

2 ½ cups flour

2 tsp. Soda

½ tsp. Salt

 

Mix sugar and shortening and add all other ingredients.
