Devil’s Food Cake

Legacy of Helen Held

Grandview, Indiana

 

1 cup sugar

¾ cup cocoa

1 cup milk

1 beaten egg

 

Blend together and cook until thick.

Remove from heat and cool.

 

1 cup sugar

¾ cup margarine or lard

½ cup milk

2 eggs

2 cups flour

½ tsp. Salt

1 tsp. Soda

1 tsp. Vanilla

 

Cream sugar and margarine.

Add beaten eggs.

Mix chocolate mixture into your sugar mixture.

Add sifted flour.

Dissolve soda in milk and add small amounts along with flour.

Bake in moderate oven.

Fudge Icing for Above Cake

2 cups sugar

1 cup cream

Heaping Tbsp cocoa

Hunk of butter size of walnut

 

Put on low heat until sugar is dissolved.

Bring to boil and let cook until it will form a soft ball when tested in cold water.

Remove from heat.

Add more butter as before and let set to cool.

Beat until thick enough for spreading.

Apple Sauce Cake

2 ½ cups apple sauce

4 cups flour

1 cup raisins

1 cup nuts

2 cups sugar

½ cup butter or shortening

1 tsp. Cloves

1 tsp. Cinnamon

1 tsp. Baking powder

1 tsp. Nutmeg

3 level tsp. Soda

½ tsp. Salt

 

Mix sugar and shortening.

Add applesauce, flour, soda, baking powder, salt, spices, nuts and raisins.

Jelly Roll

2 eggs

1 cup sugar

½ cup cold water

1 tsp. Baking powder

1 cup flour

 

Beat eggs and sugar

Sift baking powder and flour

add baking powder, flour and water alternately to sugar and egg mixture

Bake in 9” x 12” pan, or near that size, greased and floured.

Plantation Marble Cake

2 cups sifted cake flour

2 teaspoons baking powder

¼ teaspoon salt

½ cup butter or shortening

1 cup sugar

2 eggs well beaten

2/3 cup milk

1 teaspoon cinnamon

½ teaspoon cloves

½ teaspoon nutmeg

2 Tablespoons molasses

 

Sift flour once, add baking powder and salt and sift together three times.

Cream butter thoroughly, add sugar gradually.

Cream together until light and fluffy.

Add eggs; then flour alternately with milk, a small amount at a time.

Beat after each addition until smooth.

Divide batter into two parts.

To one part add spices and molasses.

Put by Tablespoons into greased loaf pan, 8x4x3 inches, alternating the light and dark mixtures.

Bake in moderate oven (350 degrees) 1 hour and 15 minutes. Or until done.

If desired,bake this cake in greased, 8x8x2 inches, in moderate oven for 60 minutes.

Decorate with any type frosting and decorate with chopped pecan meats.

Sugarless Applesauce Cake

½ cup lard

1 cup molasses

1 egg

2 ½ cups flour

1 teaspoon soda

1 teaspoon cinnamon

½ teaspoon cloves

1 teaspoon salt

1 cup unsweetened applesauce

1 cup raisins

1 teaspoon vanilla

 

Cream lard and sugar. Add egg and beat. Add molasses and applesauce. Mix together. Beat. Add dry ingredients and raisins and mix.

 

Bake in moderate oven, 350 degrees.

Strawberry Shortcake

2 teaspoons sugar

¼ cup butter

½ teaspoon salt

¾ cup milk

4 teaspoons baking powder

2 cups flour

 

Roll out like biscuit dough, then butter and fold together.

 

Bake in oven with same heat as pie crust.

 

Unfold and put crushed strawberries between and on top.

 

Serve with whipped cream if desired.

Pork Cake

1 lb. Fat ground pork

3 1/3 cups brown sugar

2 ½ cups hot water

1 teaspoon black pepper

3 Tablespoons coca in 1 cup hot water

2 teaspoons soda

2 teaspoons cloves

2 teaspoons allspice

1 teaspoon nutmeg

1 ½ lb raisins

½ lb citron

3 ½ cups currants

½ lb citron

2 heaping teaspoons baking powder

2 packages figs

2 packages dates

8 cups flour

2 pints pecans

 

Pat pork in pan. Pour over it the hot water. Then add sugar, then the remaining ingredients.

 

Bake in a very slow oven for 4 hours.

 

This makes 2 fairly good sized cakes or 3 smaller ones.

Fruit Cake

1 cup butter

4 cups sugar

6 eggs

1 cup liquid (Cocoa or Coffee)

4 cups flour

1 tsp. cinnamon

1 tsp. cloves

1 tsp. nutmeg

1 tsp. allspice

1 lb. raisins

1 lb. currants

1 lb. dates

1 lb. figs

1 pt. nuts

2 ozs. citron

2 heaping tsp. baking powder

 

Bake 4 hours in moderate oven.

Date Cake

12 oz dates

1 teaspoon soda

1 ½ cup boiling water

 

Let soak until cool.

 

2 cups flour (sifted 4 times)

1 cup sugar

1 teaspoon baking powder

1 pinch salt

1 egg

1 tablespoon shortening

1 cup nuts

 

Add dates and hot water and bake at 350 degrees.

Cooked Raisin Cake

1 ½ cups sugar

1 cup lard

Pinch salt

2 eggs

3 cups flour

2 level tsp soda

1 tsp cinnamon

½ tsp allspice

½ tsp cloves

1 tsp vanilla

1 ½ cups cooked raisins

1 cup raisin juice

 

Wash raisins and cover with water. Let boil and remove from heat, let cool.

Cream sugar, lard and salt. Add eggs and beat.

Add dry ingredients and raisins along with raisin juice a little at a time. (if you do not have a cup of juice left on raisins, add enough water to make 1 cup.)

 

Bake in moderate oven 350 degrees.

Date Cake

2 cups sugar

2 tbsp. shortening

½ tsp. salt

2 cups boiling water

2 tsp. soda

1 ½ cups black walnut meats

3 ½ cups flour

2 eggs

2 cups dates

 

Cut dates fine. Dissolve soda in boiling water. Pour over dates. Let stand while you prepare other ingredients. Add flour and nut meats.

 

Bake in loaf 1 hour or more.

Red Devils Food Cake

Sift together and measure then sift three times:

2 cups flour

¼ tsp. salt

1 ¼ tsp. soda

 

Cream thoroughly:

½ cup butter or Crisco

1 ½ cups sugar

 

Then add:

2 whole eggs beaten until thick as whipped cream

2 tablespoons cocoa

 

Mix together:

¾ cup buttermilk

1 tsp. vanilla

 

Then add flour, salt, soda you have sifted together and beaten 350 strokes.

 

Last, add 1/3 cup boiling water and stir thoroughly. Bake in slow oven. Makes 2 large layers or 9 x 16 layer.

 

Icing

Brown 3 heaping tablespoons butter. Let cool and add 1 box powdered sugar, cream and flavoring.

Potato Cake

1 cup finely mashed potatoes

1 cup shortening

2 cups sugar

½ cup cocoa

3 or 4 eggs

2 tsp. baking powder

1 ½ cups flour

1 tsp. vanilla

1 cup pecans

½ cup milk

 

Cream shortening and sugar together, add warm mashed potatoes. Add well beaten egg yolks. Add cocoa to mixture and blend well. Sift flour once, measure. Add baking powder and sift together three times. Add flour and milk alternately beating well after each addition. Add vanilla. Fold in stiffly beaten egg whites. Fold in nuts.

 

Bake in moderate oven about 300 to 350 degrees.
